Saving Streaming Videos from YouTube and other sources

YouTube streaming videos are often jerky due to slow internet connection, and often only posted for a short time. I would like to be able to save the film permanently on disk to Playback later with hopefully, better performance. I think YouTube use only 1 video streaming format, called flv.
I would like your recommendation of a good utility to do this.

Ideally, I would like the utility to also capture other types of streaming media, eg. Sound files, from Skype calls, Real Audio etc,. where the utility is automatically loaded each time a qualifying event occurs, maybe present a GUI popup query 'Record: Yes/No', rather than always have to manually invoke.
